Its a Cajun Occasion

We are planning a Cajun feast comming up!
Here are a few more from my wonderful cook of a grandmother (MIMI)

Craw fish Casserole (Ive had this and its AMAZING)

1 Tbsp butter/marg.
1 small onion chopped fine
1 small bell pepper chopped fine
1 box Jiffy Corn Muffin Mix
1 small can chopped green chilies
2 cups grated cheddar cheese
1 can cream style corn
2 eggs slightly beaten
1 tsp Tony Chachere's (Or Cajun) seasoning
Green Onions (1 small bunch chopped)
1 pkg. craw fish tails (12 oz)

Saute onions & bell pepper in butter or margarine. Mix all ingredients in large bowl and bake in 13X9 greased pan @ 350 degrees for 45 minutes or until nicely browned.
