Crabby Patties AKA Crab Meat Rangoon

Oh yumm, another delightful treat ...
So easy--- and this deep fryer, is splatter free and has a vent so our house doesn't stink up!
I just made about 25 but I used:

1 pkg won ton wrappers (Found in the produce area at Walmart, cold)
1 block cream cheese room
few tables spoons water & flour
temperature
1/2 pkg artificial crab meat, chopped
6 green onions chopped
2 cloves garlic

I mixed up all these ingredients, and added a tablespoon of mixture to each won ton wrapper. Folded in half then pulled ends together. You can see them in the picture better. I also made them with the 4 points... hard to explain but you can close it however you want. I used 2 tbsp flour and a few of water to make a paste to seal the edges. Just make sure the paste is milky and not too thick. Deep fry them until golden. They are DELICIOUS!

Banana Cream Supreme

Making this for my dad Sunday -- it is deliciousioso!! <---made up word, haha.
I cant believe its been so long since ive made it!!!

Banana Cream Supreme
1 1/4 cups chopped graham cracker squares 1/4 cup butter, melted
3 tablespoons sugar
1 cup sour cream
1/2 cup cold milk
1 package (3.4 ounces) vanilla instant pudding and pie filling 1 container
(12 ounces) frozen whipped topping, thawed
3 medium bananas, sliced
2 tablespoons pecans, grated
Chop graham crackers; place in a bowl.
Add butter and sugar; mix well. Press crumb mixture onto flat bottom of springform pan. In a classic batter bowl, whisk sour cream and milk until blended. Add pudding mix; whisk until pudding is dissolved. Add whipped topping, mixing until well blended.
Spread half of filling over crust. Slice bananas; arrange over filling. Spread remaining filling over bananas. Grate pecans over top. Garnish as desired with fresh fruit/mint leaves.

Chicken Green Chili Straw

These look pretty easy, might have to try these this week!
Ingredients
Cooking spray
1 1/2 cups cooked chicken thigh meat, chopped
1/2 cup sour cream
1/3 cup shredded Mexican cheese blend (recommended: Kraft or Sargento)
1 (4-ounce) can diced green chiles
2 tablespoons chopped fresh cilantro leaves
1 teaspoon ground cumin
1 package egg roll wrappers
1 cup honey
3 tablespoons chopped pickled jalapenos
1 tablespoon cider vinegar
Directions
Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
In a large bowl, combine chicken, sour cream, cheese, green chiles, cilantro, and cumin. Mix well to combine.
Arrange egg roll wrappers on a flat surface. Place a small amount of filling in the lower third (towards 1 corner) of each wrapper. Fold over the bottom corner of the wrapper, tightly roll up 1 turn and then fold in the sides. Dip your finger in water and run it along the corner and edge. Tightly roll up the rest of the way, sealing the edges and seam shut. Place "straws" on prepared baking sheet and spray with cooking spray. Bake 10 to 12 minutes, until golden brown.
Meanwhile, in a small bowl, combine honey, pickled jalapenos and vinegar. Mix well and serve alongside straws.

wow omlets??


ZIPLOC OMELET (This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!!)

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes [we did 15 minutes].
You can usually cook 6-8 omelets in a large pot.

For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.
Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece...

Mexican Chicken Cassrole with Green Chili corn bread

Ingredients
vegtable oil cooking spray
1 (10 3/4-ounce) can cream of chicken soup
1 (10 3/4-ounce) can cheddar cheese soup
1 (10 3/4-ounce) can cream of mushroom soup
1 (10-ounce) can tomatoes
1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken
Unsalted butter, for greasing pan
1 (11 1/2-ounce) package flour tortillas
2 cups shredded Cheddar
Directions
Preheat the oven to 350 degrees F. Spray a 13 by-9-inch pan with the cooking spray.
In a large bowl, stir together the 3 kinds of soup and the tomatoes. Stir in the chicken.
Layer the tortillas and the chicken mixture in the pan, beginning and ending with tortillas. Sprinkle the cheese over the casserole and bake for 30 minutes.
SERVED WITH :
Ingredients
Vegtable oil cooking spray
1 1/4 cups stone-ground cornmeal
1/2 teaspoon salt
2 teaspoons baking powder
1 cup shredded sharp Cheddar
1 (8-ounce) can cream-style corn
1 cup sour cream
1 (4-ounce) can chopped green chiles
1/2 cup canola oil
2 large eggs, lightly beaten
Directions
Preheat the oven to 400 degrees F. Spray miniature muffin tins with vegetable oil cooking spray.
In a small mixing bowl, combine the cornmeal, salt and baking powder, stirring with a metal spoon. Add the cheese, corn, sour cream, and chiles. Stir until lightly combined. Add the oil and eggs and stir until everything is just combined; do not over mix. The batter will be very stiff.
Place about 1/2 tablespoon of batter into each muffin cup. Bake for 18 to 20 minutes. Serve warm.

Creamy One Pot Pasta

Ingredients
4 large garlic cloves, peeled
1 jar (7 oz) sun-dried tomatoes in oil, undrained
3 cans (14.5 oz each) chicken broth (5 1/4 cups)
1 lb uncooked penne pasta
1 head broccoli (2 cups small florets)
2 medium carrots, peeled 4 oz reduced-fat cream cheese (Neufchâtel)
1/4 tsp salt
1/2 tsp coarsely ground black pepper
Grated fresh Parmesan cheese
snipped fresh basil (optional)

How to fix it
Grated fresh Parmesan cheese and snipped fresh basil (optional)
Thinly slice garlic using Color Coated Paring Knife.
Place garlic and 1 tbsp oil from sun-dried tomatoes into (8-qt.) Stockpot.
Cook garlic over medium heat 2-3 minutes or until garlic is golden brown, stirring occasionally. Remove from heat; add broth.
Return to burner; increase heat to high.
Cover and bring to a boil.
Stir in pasta; cover and simmer vigorously 8-10 minutes or until pasta is almost cooked but still firm, stirring occasionally using Mega Scraper.
Meanwhile, cut broccoli into small florets; place into Classic Batter Bowl.
Cut carrots in half lengthwise; thinly slice crosswise on a bias using Santoku Knife.
Drain sun-dried tomatoes; pat dry with a paper towel.
Slice tomatoes into thin strips.
Add carrots and tomatoes to batter bowl.
Cut cream cheese into cubes.
Add vegetables, cream cheese, salt and black pepper to Stockpot.
Stir until cream cheese is melted and fully incorporated.
Reduce heat to medium; cover and cook an additional 2-4 minutes or until vegetables are

If desired, top with grated fresh Parmesan cheese and snipped fresh basil.

Vanishing Oatmeal Chocolate Chip Cookies


Recipe on lid of the oatmeal canister thingy.
But since I'm a terrible cookie maker, I made BARS instead... I rock.


I *dont* use metal sheet pans but since my large bar pan broke, and is in the mail right now, I had to settle for Pampered Chefs new cookie sheets. It turned out okay .

..decent.... they have been eaten with no complaints so far. imagine how tastey they would have been with stoneware...way better

Tuna and Pasta Chedder Melt

INGREDIENTS
1 (10.5 ounce) can Campbell's® Condensed Chicken Broth
1 (10.75 ounce) can water
3 cups uncooked corkscrew-shaped pasta
1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup
1 cup milk
1 (6 ounce) can tuna, drained and flaked
1 cup shredded Cheddar cheese
2 tablespoons Italian-seasoned dry bread crumbs
2 teaspoons butter or margarine, melted

DIRECTIONS
Heat broth and water to a boil in skillet. Add pasta and cook until just tender, stirring often. Do not drain.
Stir in soup, milk and tuna. Top with cheese. Mix bread crumbs with butter. Sprinkle on top. Heat through.

Tortilla and Black Bean Pie

Seriously Delicious Made this a few years back WITH the beer--a must.

I lost this recipe and I Have about 50 cook books and I finally came across it!

Using it this week! Yumm..

Ingredients
4 (10-inch) flour tortillas
1 tablespoon canola oil
1 large onion, diced
1 jalapeno chile, minced (remove seeds and ribs for less heat)
2 cloves garlic, minced
1/2 teaspoon ground cumin
Coarse salt and ground pepper
2 cans (15 ounces each) black beans, drained and rinsed
12 ounces beer, or 1 1/2 cups water
1 package (10 ounces) frozen corn
4 scallions, thinly sliced, plus more for garnish
2 1/2 cups (8 ounces) shredded cheddar cheese

Directions
AS ALWAYS I USE MORE CHEESE THAN CALLED FOR
Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan, using the bottom of the pan as a guide. Set aside.
Heat oil in skillet over medium heat. Add onion, jalapeno, garlic, and cumin; season with salt and pepper. Cook, stirring occasionally, until onion is softened, 5 to 7 minutes.
Add beans and beer to skillet, and bring to a boil. Reduce heat to medium; simmer until liquid has almost evaporated, 8 to 10 minutes. Stir in corn and scallions, and remove from heat. Season with salt and pepper.

Fit a trimmed tortilla in bottom of springform pan; layer with 1/4 of the beans and 1/2 cup cheese. Repeat three times, using 1 cup cheese on top layer. Bake until hot and cheese is melted, 20 to 25 minutes. Unmold pie; sprinkle with scallions.

To serve, slice into wedges.

A version of White Chili

White Chili

INGREDIENTS
1 tablespoon olive oil
4 skinless, boneless chicken breast halves - cubed ---I boil then shread
1 onion, chopped
2 cans chicken broth
1 (4 ounce) can diced green chiles
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried cilantro
1/8 teaspoon cayenne pepper
1 (15 ounce) can Northern White Beans, drained and rinsed
2 green onions, chopped
2 ounces shredded Monterey Jack cheese

DIRECTIONS
Heat oil in a large saucepan over medium-high heat. Cook chicken and onion in oil 4 to 5 minutes, or until onion is tender

. ***I boil then shread mine**

Stir in the chicken broth, green chiles, garlic powder, cumin, oregano, cilantro, and cayenne pepper. Reduce heat, and simmer for 15 minutes.
Stir in the beans, and simmer for 5 more minutes, or until chicken is no longer pink and juices run clear. Garnish with green onion and shredded cheese.

Vegetable & Stuffing Bake

MMM came across this one while searching Halloween stuff. Easy quick side dish!

Vegetable & Stuffing Bake
What You Need:

3/4 cup MIRACLE WHIP Dressing * eeeew MAYONNAISE ALL THE WAY** hehe
1/2 cup milk
1 pkg. (6 oz.) STOVE TOP Stuffing Mix
1 pkg. (16 oz.) frozen broccoli florets, thawed, drained
1 cup KRAFT Shredded Cheddar Cheese
Make It!

HEAT oven to 350ºF.
MIX dressing and milk in large bowl until blended. Add remaining ingredients; mix lightly.
SPOON into 8-inch square baking dish.
BAKE 20 to 25 min. or until heated through.

Make Ahead

Assemble casserole as directed. Refrigerate up to 24 hours. When ready to serve, uncover and bake at 350°F for 25 to 30 min. or until heated through.
